Quinoa Tabbouleh Salad

Tabbouleh is a simple Mediterranean salad of very finely chopped ingredients and lots of fresh parsley. This is my kind of salad! It’s refreshing, packed with herbs, and brightly flavored. It’s great to prep for the week. I like to have it for lunch with grilled chicken and avocado.

Quinoa Tabbouleh Salad

Ingredients:

  • 1 1/2 cups cooked quinoa

  • 1 garlic clove, minced

  • 1 bunch parsley

  • 1 small bunch mint, stems removed

  • 1 cup cucumber, diced

  • 1/4 cup red onion, diced

  • 1 1/2 cups cherry/grape tomatoes, halved

  • Drizzle of good EVOO

  • Juice of 2 large lemons

  • Sea salt & cracked pepper to taste

Directions :

Mix in a large bowl.
