Artichoke Pistachio Dijon Salad

New pantry staple alert! I love Noble Made Coarse-Dijon mustard. It’s my secret weapon for adding a zesty kick to my salad dressings, marinades, seafood, chicken salads, and wraps.

 

 

Artichoke Pistachio Dijon Salad

This is my kind of salad! It’s full of flavor, great to prep for the week, and perfect for summer gatherings.

Servings: 4

Ingredients:

  • 2 tbsp grain mustard (I love @noblemade coarse dijon)

  • ¼ cup olive oil

  • 2 tbsp fresh lemon juice

  • 1 cup marinated artichoke hearts, quartered

  • 1.5 cups white beans or similar

  • 1 pint grape tomatoes, halved

  • ¼ cup red onion, diced

  • ¼ cup mint leaves, chopped

  • ¼ cup basil leaves, chopped

  • ⅓ cup pistachios, chopped

  • 1 large avocado cubed, add upon serving

  • Redmond reals salt sea salt and pepper to taste

Directions :

Mix the dijon, olive oil, and lemon juice in a large bowl. Add the remaining ingredients to the same bowl. Mix well. Serve with avocado.
