Southwest Baked Sweet Potato
A little careful meal planning can greatly reduce the amount of time you spend figuring out what to cook and buy at the store. Plus, it saves a lot of time in the kitchen!
This is my new favorite meal prep option for lunches - Try this southwest baked sweet potato.
Southwest Baked Sweet Potato
Servings: 4
Ingredients:
2 Sweet Potatoes
1 bag slaw
1 can of black beans
Pico de gallo
Avocado
Cilantro
Hot sauce - I love Siete Foods hot sauce
Olive oil
Salt, pepper
Directions:
Bake sweet potatoes: Preheat the oven to 425°F. Use a fork to poke holes into the sweet potatoes, set them on the baking sheet, and roast for 40 to 50 minutes.
When you’re ready to eat, cut the baked sweet potato in half lengthwise. Add slaw, black beans, pico de Gallo, avocado cilantro, and hot sauce.
