Veggie Spring Rolls & Tahini Sauce
These spring rolls are refreshing, colorful and fun to make.
Yes, they are a tad tricky to roll, but honestly, after a few rolls, you really start to get the hang of it! I stuffed mine with avocado, red cabbage cucumbers, carrots, jalapeños, scallions, and basil. You can include any variety of veggies that you like!
You can use more carrot instead of cucumber, or extra cabbage in place of the lettuce. Here are some options for the filling:
Avocado
Bell peppers
Lettuce
Red cabbage (or green cabbage)
Carrot
Cucumber
Jalapeño
Green onion
Extra firm tofu
Herbs (basil, cilantro, mint, dill)
You can't eat veggie spring rolls without a tasty dipping sauce.
I paired these spring rolls with my favorite tahini dipping sauce. For this recipe, I used tahini as the base. Tahini is made from ground sesame seeds, which makes it super nutritious!

Veggie Spring Rolls with Tahini Sauce
Time: 30 minutes
The trick is not to overstuff the rice paper wrapper and try to roll it tightly.
Get rolling:
Prep veggies. I used a mandoline slicer to get thin slices of veggies. I got mine from Amazon.
Immerse rice paper wrapper in water (one at a time) to soften for about 10-15 seconds. Transfer to a damp cutting board or a damp towel and gently spread out edges into a circle. Be careful not to tear the rice paper.
To the bottom third of the wrapper add a small handful of veggies and layer: cabbage, cucumber, fresh herbs, avocado, etc. Gently fold over once, tuck in edges, and continue rolling until the seam is sealed.
Quick tahini sauce:
¼ cup tahini
¼ cup warm water
1 tbsp rice vinegar
1 tbsp lime juice
1-inch fresh ginger, grated
2 tbsp soy sauce or tamari sauce
1 tsp maple syrup
I blended the ingredients using an immersion blender, but you could throw the ingredients into a food processor, blender, or whisk together if you grate the ginger.
This tahini sauce is also great on top of salads, noddles, or as a veggie dip.
