Meaty Vegan Nachos

For this recipe I’m using @Sietefoods products: cashew queso (even my mom, an avid cheese lover, says it tastes like cheese), and cassava flour tortilla chips. ⁣ You can totally sub these out for your favorites!

I chose to use the cassava flour chips from Siete Foods because these are grain-free. It's not necessary for everyone to choose grain-free chips, but for me, eating too much corn aggravates my skin (eczema).

Corn is a top genetically modified grain, and even if a package says non-GMO, it still can be grown using the herbicide, glyphosate. Glyphosate use is a major problem in today's agriculture practices - more on this later.

So opt for organic corn chips, or give these Siete chips a try! You can find them at most grocery stores and now Costco carries them too! ⁣

 
 

🌶Meaty Vegan Nachos 🌶

Ingredients:

•1 tbsp extra virgin olive oil⁣
•1/2 yellow onion, minced⁣
•1 tbsp cumin⁣
•1 tsp smoked paprika⁣
•1 tsp cayenne⁣
•1 tsp chili powder⁣
•Sweet Potato Soul’s Cauliflower Walnut Taco Meat)⁣
•1 bag tortilla chips ⁣
•1½ cups kidney beans, or 1 15-oz can drained and rinsed⁣
•1-2 ripe avocados, diced⁣
•½ cup salsa + more to taste⁣
•1 jalapeño pepper, sliced (seeds removed for less spice)⁣
•½ cup chopped cilantro⁣
•Cashew queso - I used @sietefoods, but you can also make your own⁣
•1-2 limes⁣

Instructions:⁣
1. Cook the onion in skillet, then add spices and the plant-based "meat". Use the spatula to break apart. It should darken and firm.⁣
2. Place the tortilla chips in a baking dish or serving platter, then top with the ground "meat", kidney beans, avocado, salsa, jalapeño, 'queso' & cilantro.⁣
3. Squeeze half of the lime onto the nachos, and season with salt & pepper to taste.⁣
