Mediterranean Bowls
A bowl-style meal is my favorite! This recipe includes many fresh herbs, vegetables, and nutrient-dense grass-fed beef. The many textures and flavors make this meal filling and satisfying.
I utilized the olive bar at the grocery store for this meal. I went to Whole Foods Market and I found spicy green and kalamata olives, marinated gigante beans, roasted garlic cloves, and dolmades. I chopped up the roasted garlic and olives in the ground beef as it cooked. I used the dolmades as an addition in the bowls. I found the best Greek seasoning from Charleston Spice Co. and seasoned the beef with classic Greek herbs, like oregano, nutmeg, paprika, tellicherry peppercorn, rosemary, and basil.
Mediterranean Bowls
I serve this as a “build-your-own” style meal. Add in whatever you’d like in your bowl.
Servings: 4
Ingredients:
1 lb ground beef (I recommend regenerative grass-fed ground beef from Force of Nature Meats)
2 tbsp Greek seasoning (I used Greek seasoning from Charleston Spice Co.)
6 roasted garlic cloves (or 3 fresh minced garlic)
1/4 cup chopped green/kalamata olives
Salt to taste
4 cups mixed greens lettuces
1 cup chopped radicchio
1/4 cup fresh chopped parsley
1/4 cup fresh chopped dill
1/3 cup chopped cherry tomatoes
1/4 cup chopped red onions
Juice of 1 lemon
1/4 EVOO
Optional for serving:
Tzatziki sauce
Dolmades
Gigante beans
Olives
hummus
4 whole wheat pita pockets (I buy these)
Directions for the meat:
Heat skillet over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain any fat.
Add 1/4 cup water, Greek seasoning, garlic, olives, salt and pepper. Stir to combine and continue cooking over medium-low heat until the sauce has thickened, about 3-5 minutes. Set aside.
Directions for the herb radicchio salad:
In a large bowl combine radicchio, chopped parsley, chopped dill, cherry tomatoes, red onions, lemon juice, EVOO, salt and pepper. Set aside
Assembly:
In a bowl serve 1 up (big handful) of mixed greens, and add a serving of the herb radicchio salad on top of the greens. To the side add the ground beef. Serve with a slice of pita, spoonful or tzatziki, hummus, or other toppings of choice. Enjoy!
