So you want the brain-boosting, mood-boosting, gut health-boosting effects of Lion's Mane mushrooms. But HOW do to incorporate more lion's mane mushrooms into your diet? ⁣

Mushrooms are a part of my diet weekly. At your typical grocery store, you can find common varieties, such as baby Bella, portabello, and shiitake. Sometimes you'll get lucky and find oyster mushrooms or my favorite, Lion's Mane, but it's a rare find.⁣

I recommend researching a local fungi company in your town and checking out your local farmer’s markets to have consistent access to these brain-boosting fungi. In Charleston, you can get lion's mane mushrooms from @lowcountryfungi, as well as other varieties.

Lion’s Mane Crab Cakes

These tasted 99.9% like crab cakes. Cheaper than crab and you get the brain-boosting benefits of Lion's mane mushrooms. ⁣

Servings: 4 cakes

Ingredients:

  • 8 oz lions mane mushrooms⁣

  • ½ cup panko breadcrumbs⁣

  • ¼ cup green onion (finely diced)⁣

  • 3 tbsp mayonnaise⁣ (I recommend Primal Kitchen avocado oil mayo)

  • 2 tsp Worcestershire sauce⁣

  • 1.5 tsp old bay seasoning⁣

  • 1 tsp dijon mustard⁣

  • 1 tbsp parsley (finely chopped)⁣

  • 1 tsp lemon zest⁣

  • black pepper to taste ⁣

  • lemon wedges to garnish⁣

Directions: ⁣

  1. Hand shred mushrooms into small pieces resembling the texture of flakey crab.⁣ Then, coarsely chop.

  2. Combine mayonnaise, green onion, Worcestershire, old bay seasoning, Dijon mustard, parsley, lemon zest, salt and pepper. Mix until fully incorporated.⁣

  3. Mix in mushroom until fully incorporated.⁣

  4. Mix in Panko breadcrumbs until fully incorporated.⁣

  5. Form mixture into about 4 equal size round flat patties ⁣

  6. Heat oil in a sauté pan on medium/high heat. Cook patties for approximately 2-3 minutes per side. Should be golden brown and cooked throughout.⁣

  7. Add optional garnish, squeeze of lemon and enjoy!⁣
