Strawberry & Creme Energy bites!
These energy bites are full of healthy fats, protein, and no added refined sugar. You’re sure to feel satiated and ready to tackle the rest of your day.
Time: 10 mins | Serving: 14-16 bites
Ingredients:
1 1/2 cups raw cashews
1/2 cup rolled oats
4 pitted Medjool dates
3 medium fresh strawberries
1/3 cup creamy cashew butter
2 Tbsp. Raw honey
4 Tbsp. hemp seeds
1 tsp. vanilla extract
1/2 tsp of sea salt
1/3 cup freeze-dried strawberries, crushed, plus more for topping
1/3 cup Lily's Sweets White Chocolate Style Baking Chips or Enjoy Life dairy-free white chocolate chips
Directions:
Place cashews and oats in a food processor; blend until finely chopped. Add dates, strawberries cashew butter, honey, hemp seeds, vanilla, and salt; blend until the mixture comes together and resembles cookie dough.
Add mixture into a bowl and freeze-dried strawberries and baking chips; mix until combined.
Scoop out 14-16 portions and roll into balls. Sprinkle extra crushed freeze-dried strawberries overtop. Keep bites chilled for up to 10 days.
