Peppermint Candy Cane Truffles!

 

If you’re looking for a quick holiday treat, these peppermint candy cane truffles are it! They are super easy to make and are dairy-free, gluten-free, and have no added sugar!

These truffle contain no refined sugar. They are perfectly sweet using just pure maple syrup. Pure maple syrup provides antioxidants and some minerals, especially manganese & zinc, and is lower on the glycemic index than cane sugar.⁣

These treats are made with coconut flour, so they are safe for those who are gluten-free. If you don’t have coconut flour at home, you can use all purpose flour instead. I prefer to use coconut flour because of its impressive nutrition profile. It is high in fiber, protein and healthy fats. It has 10g of fiber per 1/4 cup! All purpose baking flour contains only 1g of fiber per 1/4 cup. I always look at the fiber content on nutrition labels because the more fiber, the more benefit for my gut health.


Peppermint Candy Cane Truffles 

Cook time: 20 mins | Makes 14, 1-inch truffles

Ingredients:

Truffle Filling: 

  • 1 cup shredded unsweetened coconut 

  • 1/2 cup coconut flour

  • 3 tbsp coconut oil, melted 

  • 4 tbsp pure maple syrup 

  • 1/4 tsp salt 

  • 1 tsp vanilla extract 

  • 2 tbsp coconut milk

  • 4 crushed candy canes

Chocolate Coating:

  • 1 cup dark chocolate chips (I love Lily’s, they are sweetened with stevia)

  • 1 tbsp coconut oil 

  • 4 drops peppermint essential oil or 1 tsp peppermint extract. I use DoTerra peppermint essential oil*

Directions:

  1. Combine truffle filling ingredients (except candy canes) in the food processor. Blend until dough forms. Remove from food processor and add to bowl.

  2. Crush the candy canes into small pieces. Add 3/4 of the crushed candy canes into filling ingredients and combine.

  3. Line a small baking sheet with parchment paper. Roll filling into 1-inch balls. Freeze for 10 minutes while you prepare the chocolate.

  4. In a small pot on the stove, melt chocolate chips with 1 tbsp of coconut oil. Add 4 drops of peppermint essential oil or peppermint extract. Mix until all chocolate chips are melted.

  5. Take the filling out of the freezer. Drop the truffles into the pot and coat in chocolate. Immediately sprinkle crushed candy canes on top. Store in the fridge.

    *If you are using an essential oil, be sure it is a therapeutic grade essential oil & it is safe to consume.
