Mediterranean Lentil Salad

High Protein AND Fiber Meal Prep Recipe!

This Mediterranean lentil salad is made with lots of fresh veggies and herbs in a simple vinaigrette, loaded with plenty of protein & fiber. I love adding a big handful of arugula upon serving to bulk it up.


6 servings | 21g protein | 12g fiber

 
 

Mediterranean Lentil Salad

Time: 20 mins | Servings: 6

Ingredients:

  • 2 cups of cooked lentils (I used the cooked lentils from @traderjoes)

  • 2 garlic cloves, minced

  • 1 small red onion, diced

  • 1 cup grape tomatoes, halved

  • 1 medium cucumber, chopped

  • 4 tablespoons of olive oil

  • 3 tablespoons of red wine vinegar

  • 2 tbsp lemon juice

  • 1 (15-ounce) can of garbanzo beans

  • 4 teaspoons of dill

  • 1/3 cup chopped parsley

  • Salt and pepper, to taste

Combine ingredients in a bowl and you’re ready for the week!
