Vegan Deluxe Mac & Cheese

This recipe was inspired by Forks Over Knives (tip: I love the Forks Over Knives website for easy plant-based meals). It's creamy & delicious! It got the approval of friends & family so I hope you give it a try!

 

Vegan Deluxe Mac & Cheese:

This comforting vegan mac n cheese is a smooth purée of vegetables, soaked cashews, nutritional yeast, and turmeric. It’s blended to create the perfect vegan cheese. It takes about 30 minutes to make. You can make the sauce ahead of time and store it in the freezer for a quick meal.

Time: 30 minutes | Servings: 6-8

Ingredients:

  • 1 large russet potato, peeled and cut into ½-inch cubes

  • 1 cup chopped carrots

  • 1 cup chopped yellow onion

  • 1 teaspoon ground turmeric

  • 5 cloves garlic, minced

  • 2 cups vegetable broth

  • 2/3 cup raw cashews

  • 1/2 cup nutritional yeast

  • 1 teaspoon sea salt

  • 1 box elbow pasta

  • 2 tsp freshly ground black pepper

  • 1 tsp paprika

INSTRUCTIONS

  • Combine the potato, carrots, onion, turmeric, garlic, and vegetable broth in a medium saucepan. Bring to a boil over high heat. Reduce heat to low and simmer, covered, for 20 minutes.

  • Place the cashews in a small bowl and add enough hot water to cover them. Soak for at least 10 minutes; drain.

  • Meanwhile, cook the pasta according to package directions.

  • Transfer the potato mixture to a blender. Add the cashews, nutritional yeast, salt. Add some water to thin out, if desired. Blend for 2 minutes or until smooth and creamy.

  • Add the sauce to a large bowl and mix in the pasta. Add the paprika. Toss to coat. Season with pepper. I like to serve this dish with a side of broccoli.
