Refreshing, delicious, and EASY vegan quinoa salad with simple olive oil and fresh lime dressing. Enjoy for lunch or as a perfect side for cookouts and summertime gatherings.

 
 

Fiesta Quinoa Salad

The perfect plant-based lunch or side for cookouts, sandwiches, and more!

Time: 20 mins | Servings: 6

Ingredients:

  • 2 cups cooked quinoa

  • 1 can black beans, rinsed and drained

  • 1 cup grape tomatoes cut into small pieces

  • 2 cucumbers, peeled and diced

  • 1 or 2 jalapeños, diced

  • 1 medium red onion, diced

  • 1 red bell pepper, diced

  • 1 yellow bell pepper, diced

  • 1 avocado, diced

  • ½ cup cilantro, chopped

Dressing

  • ⅓ cup extra virgin olive oil

  • 2 teaspoons kosher salt

  • 1 tbsp cumin

  • 2 limes juiced

  • 2 tsp paprika

  • black pepper to taste

Directions:

  1. In a large bowl add the main ingredients.

  2. In a small bowl, whisk together olive oil, salt, lime juice, and black pepper or paprika.

  3. Pour the dressing over the salad and mix everything together to evenly coat the salad with the dressing.

  4. Enjoy at room temperature or chilled in the refrigerator.
