The Ultimate Chili

Chili is the ultimate cold-weather comfort food. Healthy and delicious, this is a great recipe for busy weeknights, game day, or any time you’re craving something cozy. This turkey chili recipe is packed with tons of spices, veggies, beans and lean ground turkey to give it the perfect thickness and flavor.


You can easily make this recipe vegetarian by omitting the ground turkey. Or add ground turkey or ground beef for a more hearty soup. I love serving this chili over a baked potato with some cilantro, scallions, and jalapenos.

The Ultimate Chili

Servings: 6

Ingredients:

  • 1 lb lean ground turkey (omit for vegetarian)

  • 1 yellow onion, diced

  • 3 large carrots, sliced

  • 4 celery stalks, sliced

  • 1 red bell pepper, diced

  • 3 garlic cloves, chopped

  • 1 cup vegetable broth

  • 1 (15 ounce) can black beans, rinsed and drained

  • 1 (15 ounce) can kidney beans, rinsed and drained

  • 1 (15 ounce) can white beans, rinsed and drained

  • 1 (28 ounce) can of diced tomatoes (no salt added)

  • 1 (15 ounce) can fire roasted tomatoes

  • 1 (12 ounce) can tomato sauce

  • 2 bay leaves

  • 2 tbsp ground cumin

  • 2 tbsp oregano

  • 1 tbsp chili powder

  • 1 tbsp smoked paprika

  • Black pepper and kosher salt, to taste

  • Optional toppings: cilantro, avocado, jalapeno, scallions

    Directions:

  1. Add 2 tbsp olive oil in a large pot and place over medium heat. Add in onion, garlic, carrot, celery, and red bell pepper and saute for 5-7 minutes, stirring frequently. 

  2. Add in ground turkey and break up the meat; cooking until no longer pink. Next add in the spices - chili powder, cumin, oregano, paprika, bay leaves and salt; stir for about 30 seconds

  3. Next add in tomatoes, tomato sauce, broth, and beans. Bring to a boil, then reduce heat and simmer for 30-45 minutes or until chili thickens and flavors come together. Taste and adjust seasonings and salt as necessary.

  4. Garnish with anything you'd like. Makes 6 servings, about 1 1/2 cups each.

Note: I recommend getting no salt-added canned beans and tomatoes.
