Vegan Burrito
This sweet potato, rice, bean & veggie burrito tastes AMAZING, and is so easy to make! Roast the sweet potatoes ahead of time and it makes for an even easier lunch or dinner.

INGREDIENTS
1 large sweet potato
1/2 red onion, quartered
1 green bell pepper, roughly diced
1 12 oz package of Cascadian Farms with organic black beans, brown rice, corn, and red bell pepper (you can find this in the frozen sections at most grocery stores; Publix, Harris Teeter, Whole Foods)
2 tbsp olive oil
1 tbsp cumin
1 tbsp chili powder
1 tsp cayenne pepper
Salt and pepper, to taste
Tortillas
Toppings: Cilantro, avocado, jalapeno, lime, hot sauce
INSTRUCTIONS
1. Preheat oven to 400F. Cut sweet potatoes into 1 1/2 in cubes. Season with olive oil, salt, and pepper. Bake for 25 mins.
2. Heat skillet over medium heat. Add 2 tbsp olive oil and add frozen Cascadian Farms veggies, red onion and green bell pepper. Add spices. Cook about 8-10 minutes.
3. Smash avocado on a tortilla and add sweet potatoes, rice/bean/veggie mixture.
4. Top with cilantro, lime squeeze, add jalapeno & hot sauce as desired.
