Avocado Cumin Grilled Carrots
If you think you don’t like cooked carrots, think again. These grilled carrots are everyone’s favorite! People always want the recipe when I make them. They are a go-to when I’m grilling out. The finishing dressing adds the perfect touch - tangy, sweet, and spicy. Grab the recipe below.
Avocado Cumin Grilled Carrots
You actually don’t have to bother with peeling the carrots for this recipe—not only do the thin skins pack lots of nutrients, but you’ll also get a better char with them.
Serving: 4
Ingredients:
2 tsp cumin powder
4 Tbsp fresh lemon juice
2 tsp honey
¼ cup plus 2 Tbsp. extra-virgin olive oil
1 jalapeno pepper, thinly sliced
2 tsp fresh ginger, finely grated
Salt and pepper to taste
1 1/2 lb. medium carrots, scrubbed, halved lengthwise, tops trimmed - Don’t peel
2 avocados, cut into large pieces
Directions:
Prepare a grill for medium heat.
Scrub the carrots. Trim the tops, and cut them in half lengthwise so they are all about the same size. Do not peel. Coat carrots in a little oil before grilling. Season with salt and pepper.
In a small bowl, add cumin, lemon juice and honey. Whisk in ¼ cup oil until combined, then stir in jalapeno and ginger. Season with salt and pepper. Let sit until ready to serve.
Grill carrots, turning occasionally, until lightly charred in spots and tender, 10-15 minutes.
Transfer carrots to a serving platter. Pour sauce over the carrots. Season with salt. Arrange avocado chunks over the carrots. Serve immediately.
