Benefits of Chickpeas
Chickpeas, or garbanzo beans, are one of the world’s oldest consumed crops. They are one of the most popular legumes in the world and are consumed across every continent. In addition to being full of fiber, iron, zinc and B vitamins, they offer a variety of health benefits.
Supports Blood Sugar
Chickpeas, canned and dried, have a low-glycemic index and low-glycemic load. This can help in preventing blood sugar spikes and in insulin levels. Preventing these spikes can aid in controlling overall blood sugar, especially in people with type 2 diabetes.
Improves Gut Health
Raffinose, a soluble fiber, is found in chickpeas. When the bacteria in this fiber is broken down butyrate, a short-chain fatty acid, is produced. Butyrate contributes to reducing inflammation in your colon. This promotes regularity in your intestines.
Supports Healthy Cholesterol Levels
Chickpeas contain a plant sterol called sitosterol. Sitosterol is very similar, structurally, to cholesterol in the body. However, it actually interferes with the body’s absorption of cholesterol and helps lower the cholesterol levels in your blood. This is great for your heart and preventing heart disease.
Chickpeas also can boost satiety, boost digestion, keep blood sugar levels stable and increase protection against metabolic syndrome.

Buffalo Chickpea Salad
Time: 2 mins | Servings: 3
Ingredients:
1 can chickpeas
1/4 cup Primal Kitchen buffalo sauce
Directions:
Drain and rinse chickpeas.
Smash chickpeas with the back of a fork.
In a small bowl, add buffalo sauce and mix with smashed chickpeas.
Enjoy with crackers, carrots, avocado, and cucumbers, or in a sandwich or wrap.
